This book has some wonderful recipes in it. Yes Emma will eat some veggies, but not all. This book has some interesting ways to make sure your children are eating their veggies. I spent yesterday evening, roasting, steaming, peeling, pureeing all kinds of veggies. Tonight we are having Spaghetti and Meatballs. This actually has butternut squash puree and carrot puree! I have made Tofu Nuggets, and while, very tasty, getting the pea puree to stay on the tofu must take some kind of magic. I do want to try her recipe for doughnuts which contain pumpkin puree and sweet potato puree. You can freeze them for up to 1 month in the freezer.
I have made one resolution for 2008 and that is to cook more and for us to just eat better as a whole. I have actually read, at least for adults, it is better to try to get all your carbs out of your veggies - but if you do eat bread, try for whole grains. Now, no, this does not sound fun. You know how long it has been since I have eaten pasta. And, oddly enough, I rarely miss it. BUT, there is a recipe in the book I want to try. She uses whole wheat pasta and "butters" it -- but it has yellow squash puree in it!
I made some dip out of pureed navy beans, etc, so I will be eating that with raw broccoli as well. I am just trying to move away from all the gross, bad for you processed foods.
Now, I just need a magic bullet : )
